Mango marinade for chicken pieces

    mango - diced (fresh/tinned)
  • 1
    cup
    onion - chopped
  • 1
    Tbs
    ginger - grated
  • 1
    Tbs
    garlic - chopped
  • 2
    Tbs
    cider vinegar
  • 1
    chilli - deseeded and chopped
  • 1/2
    cup
    mango juice
 

Method

Whiz the ingredients and one cup of mango in a food processor and then combine with unprocessed mango.

Pour over chicken and marinade for 2 hours. Bake for 40 – 50 minutes at 220°C until golden and the chicken is cooked.
