Place the semolina in a mixing bowl. Stir in the milk and rose essence. Leave for 10-15 minutes.
Add the flour and rub in the ghee, by hand, until it forms a workable dough.Break the dough into marble sized pieces, flatten and fry until golden and crisp. Remove with a draining spoon and leave to cool.Prepare the milk syrup by combining the ingredients and boiling for 3-5 minutes, or until thick. Pour the syrup over the fried biscuits and leave until absorbed.Crumble the mixture into small pieces and sprinkle with almonds.Recipe reprinted with permission of Snowflake.
