Malay vegetable curry wraps

    oil
  • 1
    onion, chopped
  • 1
    piece cassis
  • 2
    cardamom seeds
  • 400
    g
    (1 can) chopped tomatoes
  • 1
    kg
    mixed vegetable of your choice (butternut, carrots, bay marrows and mushrooms), peeled and chopped
  • 5
    ml
    ginger and garlic paste
  • 2
    ml
    turmeric
  • 5
    ml
    ground cumin
  • 5
    ml
    ground coriander
  • 5
    masala
  • salt
  • 6
    rotis
 

Method

 
Heat the oil in a saucepan and stir-fry the onion with the whole spices until glossy.
Add the tomatoes, vegetables, remaining spices and salt, reduce the heat and simmer until the vegetables are just done but still firm to the bite.
Add water if the mixture becomes dry.
Divide the mixture among the rotis, roll up and serve with chutney, and tzatziki (cucumber and yoghurt).
