    ml
    margarine
  • 1
    medium onion, chopped
  • 1
    leek, sliced into rings
  • 10
    ml
    medium curry powder
  • 1
    butternut, peeled, seeds removed and cubed
  • 2
    potatoes, peeled and cubed
  • 250
    g
    frozen hake, skin removed and cubed
  • 1
    Litres
    boiling water
  • 1
    chicken stock cube
  • salt
  • black pepper
  • 125
    ml
    cream
  • chives for garnish
 

Method

 
Heat the margarine in a saucepan and sauté the onion and leek until soft. Add the curry powder and stir for 1 minute. Add the butternut, potatoes, hake, boiling water and chicken stock cube. Bring to the boil and season to taste with salt and pepper. Cook until the ingredients are soft and then chill slightly. Liquidise in a food processor until smooth, then chill well. Add the cream just before serving and garnish with chives. Makes about 1 litre.
