Maize-meal layers with tomato relish

    ml
    cake flour
  • 20
    ml
    baking powder
  • 3
    ml
    salt
  • 65
    ml
    sugar
  • 250
    ml
    cooked soft maize porridge
  • 125
    ml
    water
  • 200
    g
    can of creamed sweetcorn
  • oil for deep-frying

Sift together flour, baking powder and salt. Add sugar. Blend water and porridge into a paste, mix in sweetcorn and add to flour mixture. Stir until mixture forms a smooth batter. Heat oil until hot, but not smoking. Dip a tablespoon into water, then use it to scoop spoonfuls of batter into oil in pan. Deep-fry until brown on all sides. When fritters are cooked through, remove and drain on absorbent paper. Serve on same day with custard, or whipped cream.
