Maffe d'agreou (lamb with peanut and okra sauce)

    lamb, cut into cubes

    onions, chapped

    tomatoes, peeled and chopped

    tomato paste

    peanut butter

    sweet potatoes, peeled and quartered

    fresh okra, trimmed and chopped
  • 1
    large cassava, peeled and chopped
  • 1
    red pepper, chopped
  • salt and pepper to taste
  • 500
    ml
    water
 

Method

 
Heat oil and brown lamb, remove from pot and keep warm. Add onion, sauté until transparent, add all remaining ingredients and stir-fry for about five minutes. Add water, return lamb to pot and simmer covered for 50 to 60 minutes. Serve on rice. Serves 4-6.
