Ingredients (14)

250.00 g pasta — elbow macaroni
2.00 anchovy fillets — tinned, drained
30.00 ml oil
1.00 garlic — cloves, crushed
1.00 onion — medium, chopped
410.00 g tinned tomatoes — whole
5.00 ml fresh basil — chopped
dried basil
15.00 ml tomato paste
salt and freshly ground black pepper — to taste
375.00 ml cheese — grated
12.00 tomatoes — sliced
olives — black, pitted
15.00 ml fresh basil — chopped

Method:

Boil the macaroni in lightly salted water until done. Soak the anchovy fillets in milk for 30 minutes and rinse well. Halve lengthwise. Heat the oil and sauté the garlic and onion until tender. Add the tomatoes, basil, tomato paste and seasoning. Cover and simmer slowly for 20 minutes. Remove from the stove plate. Spoon half the macaroni into an
ovenproof dish. Spoon the tomato mixture on top and cover with the remaining pasta. Sprinkle the cheese on top and arrange the anchovy fillets in a diamond pattern on top of the cheese. Place a slice of tomato in each diamond and finish with black olives. Bake for about 30 minutes until heated through.
Serves 4.
