Low-fat chocolate mousse

    ml
    custard powder
  • 60
    ml
    cocoa powder
  • 175
    ml
    castor sugar
  • 500
    ml
    skimmed milk
  • 20
    ml
    gelatine
  • 410
    g
    tin ice cold low-fat evaporated milk
  • 30
    ml
    cold water
 

Method

 
Sift the custard powder, cocoa powder and castor sugar together into a heavy-based saucepan.
Add the milk and bring to the boil, stirring continuously until the mixture thickens.
Simmer for 2 minutes, stirring.
Remove from the heat.
Sprinkle the gelatine over the cold water and stand until the gelatine sponges.
Stir into the hot cocoa mixture and cool to room temperature.
Beat the cold evaporated milk until stiff and fold the cocoa mixture into it.
Chill overnight.
