Loin of lamb with crumbed crust

    loin of lamb (see tips)

    mustard powder
  • 150
    ml
    fresh breadcrumbs
  • 40
    g
    Parmesan cheese
  • 50
    ml
    parsley, finely chopped
  • 5
    ml
    lemon rind, finely grated
  • 4
    cloves garlic, crushed
  • 50
    ml
    oil
  • 50
    g
    butter, melted
 

Method

 
Preheat the oven to 230 ºC (450 ºF). Lightly season the lamb with salt and pepper and place on a rack in an oven pan, fatty side up. Sprinkle the mustard powder over the meat. Combine the breadcrumbs, Parmesan cheese, parsley, lemon rind and garlic and press the mixture firmly on top of the meat. Combine the oil and butter and pour over the meat. Bake for 15 minutes at 230 ºC, then reduce the heat to 160 ºC and bake for about 20 to 40 minutes until done to your liking.
