Lime and ginger chicken

Ingredients

  • 12
    small chicken thighs
  • BASTING SAUCE
  • 1.50
    limes, juice of (reserve zest for garnish)
  • 4
    cm piece ginger, peeled and grated
  • 60
    ml
    honey
  • 20
    ml
    soya sauce
  • 15
    ml
    olive oil
  • 10
    ml
    sesame oil
 

Method

30 minutes
 
To ensure that the chicken is succulent but cooked through, place the pieces on a baking tray and bake in a preheated 200 °C oven for 15 to 20 minutes (or boil for 5 to 10 minutes).
Meanwhile, mix sauce ingredients in a saucepan and bring to the boil.
Remove from heat.
Transfer chicken to the braai, brush with basting sauce and cook over medium-hot coals for 5 to 10 minutes, turn and brush again.
Cook for another 5 to 10 minutes, or until juices run clear when pierced with a skewer or sharp knife.
Garnish with lime zest.
