Saucy chocolate pudding

Ingredients (15)

750 ml sweet potato — finely grated
125 g dates — chopped
10 ml Bicarbonate of soda
250 ml boiling water or orange-mocha rooibos tea
2 eggs — whisked
50 g butter — melted
180 ml cocoa powder
3 ml salt
10 ml Baking powder
70 g dark chocolate — grated
80 ml walnuts — chopped
250 ml boiling water or orange-mocha rooibos tea
5 ml coffee granules or ground cinnamon
125 ml honey — preferably raw
10 ml vanilla — essence

Method:

Preheat the
oven to 180°C. Grease 4 small baking tins or a large ovenproof dish with  nonstick spray.

1. Mix the
sweet potato and dates, sprinkle the bicarbonate of soda  over and pour the first lot of boiling  water or tea over. Leave to cool.

2. Whisk the
eggs and butter, add the cocoa powder, salt and baking powder and mix well. Add
to the sweet potato mix.

3. Spoon
half the batter into the prepared tins or dish and sprinkle half the chocolate
and nuts over. Add rest of the batter.

4. Mix the
second lot of boiling water or tea with the coffee granules or cinnamon, honey
and vanilla essence and pour over the batter.

5. Sprinkle
the rest of the chocolate and nuts over.

6. Bake for
35-40 minutes or until done but still moist and saucy.

7. To serve: Top with ice cream or custard
