Ingredients (9)

350 g dark chocolate — chopped
400 g evaporated milk
5 ml vanilla — essence
3 chocolate wafer biscuits — finely crushed
500 ml desiccated coconut
100 g peanuts — salted, chopped
100 g castor sugar
30 ml coconut — toasted
30 ml peanuts — finely chopped

Method:

Line a 20cm X20cm square baking dish with plastic wrap, leaving a bit hanging on the sides.

Heat chocolate and evaporated milk in a saucepan over medium heat, stirring until the chocolate melts.

Remove from heat and vanilla essence.

Combine cookies, coconut, peanuts and castor sugar in a bowl.

Pour in the chocolate mixture and mix well.

Pour mixture into dish.

For the topping:

Mix coconut and peanuts and sprinkle over brownie mixture.

Refrigerate until set. Remove brownies from pan.

Remove plastic and cut into squares.
