Ingredients (9)

250 g dates
125 g
100 g cashew nuts — raw
50 g sunflower oil
125 g desiccated coconut
30 ml coconut oil
salt — just a pinch

Method:

Line a 20
x 20cm square baking tin with baking paper.

1. Put the
dates and apple slices in the bowl of a food processor and pulse until finely
chopped and well mixed.

2. Add the
cashew nuts, sunflower seeds, desiccated coconut, coconut oil and salt, and
pulse again until finely chopped.

3. Transfer
the mixture to the cake tin and press it down firmly.

4. To
finish:
Top with extra cashew nuts (if using). Chill for 30 minutes, remove from
the baking tin and cut into bars.

5. Store
in an airtight container, preferably separated with wax paper if you’re taking
them on the road.
