Dutch baby pancakes with plums

We all love eating pancakes but making them can be a mission. This sharing one-pan pan cake is the perfect solution – and there’s no flipping.

Ingredients (12)

FRUIT
6 plums — halved
30 ml maple syrup
5 ml vanilla — extract
pancakes
4 eggs
250 ml milk — full cream
250 ml flour — cake
60 ml castor sugar
30 ml butter — unsalted
30 ml canola oil
to serve — to serve
icing sugar

Method:

Preheat the oven to 200°C.

1. Fruit Put the plums on a baking sheet and
drizzle the maple syrup over. Cook in the oven until the plums begin to soften
(about 15 minutes), then stir in the vanilla extract.

2. Pancake Whisk the eggs, milk, flour and sugar to
a smooth batter in a bowl.

3. Add the butter and oil to a cast­iron pan then
heat in the oven for 3 minutes. Remove the pan from the oven and swirl to coat
its base with the oil and butter.

4. Quickly pour in the batter and return the pan to
the oven immediately.

5. Bake for about 25 minutes or until the
sides have puffed up and the edges are golden and crisp. Don’t open the oven
during baking as this will cause the pancake to collapse.

6. To serve: Serve immediately out of the oven topped with the plums and
dusted generously with icing sugar.
