Chicken and date casserole

Add a sweet twist to a chicken staple by including dates into the meal.

Ingredients (11)

2 kg chicken breast fillets — cut into strips
250 g dates — pitted
20 ml paprika
250 ml vinegar — red wine
15 ml dried oregano
12 garlic — cloves, crushed
12 bay leaves
freshly ground black pepper
30 ml sugar
salt
fresh coriander — to garnish

Method:

1. Mix all the ingredients except
the salt and fresh coriander and marinate in the fridge for 2 hours.

2. Preheat the oven to 180°C.

3. Transfer the chicken and
marinade to a casserole dish, season with salt and cook, uncovered, in the oven
for 20 minutes or until done.

4. Sprinkle fresh coriander over
and serve.
