Lentil and raisin salad

  • 150
    g
    seedless raisins
  • 2
    oranges, juice and finely grated rind
  • 625
    ml
    cooked brown lentils
  • large bunch of flat-leaf parsley, finely chopped
  • salt and freshly ground black pepper
  • 60
    ml
    olive oil
  • 15
    ml
    white wine vinegar
  • 2
    ml
    cumin
  • 2
    ml
    mustard seeds
  • 5
    ml
    roasted curry powder
 

Method

 
Soak the raisins in the orange juice overnight.
Add the orange rind, lentils and parsley.
Season with salt and pepper.
Mix the olive oil, vinegar, cumin, mustard seeds and curry powder together until well blended and pour over the lentil mixture.
Adjust the seasoning and leave the salad to stand for about 1 hour before serving.
