Lemon squares with coconut

    Nestlé condensed milk
  • 250
    ml
    coconut
  • 60
    ml
    lemon juice
  • 5
    ml
    lemon rind
  • 100
    ml
    butter, melted
  • 200
    g
    Tennis biscuits
  • extra coconut for sprinkling on top
 

Method

 
Spray a 24 x 24 cm dish with non-stick spray. Mix the condensed milk and lemon juice and rind and beat well. Add the coconut and mix. Add small quantities of melted butter at a time while stirring continuously. Arrange a layer of Tennis biscuits in the bottom of the prepared dish. Spoon a layer of the coconut mixture on top, repeating the layers until all the ingredients have been used. Sprinkle with coconut and chill until needed. Cut into squares and store in the fridge. Makes 31 squares.
