Lemon-seared calamari

    small calamari tubes
  • 85
    ml
    lemon juice
  • 15
    ml
    olive oil
  • 2
    clove garlic, crushed
  • 15
    ml
    finely chopped fresh lemon thyme
  • 5
    ml
    sea salt
  • freshly ground black pepper
 

Method

 
Cut a few slashes in the calamari with the tip of a sharp knife. Mix lemon juice, olive oil garlic, thyme, salt and pepper and pour over calamari. Refrigerate for at least half an hour. Preheat a grill pan, then fry calamari over high heat for about 20-30 seconds on each side. Serve with salad greens and parsnip chips. Serves 6.
