Lemon meringue pie

    g
    ginger biscuits, finely crushed
  • 60
    ml
    butter, melted
  • 5
    ml
    cinnamon
  • FILLING
  • 2
    cans Nestlé condensed milk
  • 250
    ml
    lemon juice
  • 1
    lemon, grated rind
  • 4
    eggs, separated
  • 70
    g
    coconut
  • 150
    g
    castor sugar
 

Method

 
1. Mix butter and cinnamon into finely crushed biscuits. Press into a 28 cm pie dish. 2. Mix together condensed milk, lemon juice and rind, egg yolks, coconut and 100 g of the sugar. Pour into prepared dish. 3. Whisk egg whites until soft peaks form, fold in remaining sugar and spread over filling. Sprinkle a little coconut over the top. 4. Bake for 20 to 25 minutes at 180 ºC.
