Lemon chicken with wild rice

    skinless chicken breast fillets
  • 5
    ml
    cake flour, seasoned with salt and black pepper
  • 7
    ml
    butter
  • 1
    onion, finely chopped
  • 5-cm piece fresh ginger, grated
  • 2
    stalks celery, sliced into rings
  • 200
    ml
    pineapple juice
  • 5
    ml
    soy sauce
  • 2
    thin slices and juice and rind of 1 lemon
  • 5
    ml
    cornflour
  • half a 150-g packet rice with wild rice
  • 3
    chives, chopped
  • 10
    ml
    cashew nuts, toasted
 

Method

 
Roll the chicken breasts in the seasoned cake flour and fry in the butter until brown on the outside. Remove from the pan and fry the onion, ginger and celery in the same pan until tender. Return the chicken breasts to the pan and add the pineapple juice
