Leek and goat's milk cheese tartlets

    g
    frozen puff pastry, thawed
  • 125
    g
    goat's milk cheese (or use blue cheese or feta)
  • 15
    ml
    sunflower oil
  • 3
    leeks, washed and sliced
  • 50
    g
    pine kernels, toasted
 

Method

 
Preheat oven to 200 ºC. Cut 4 rounds, each 8-9 cm in diameter, from thawed puff pastry. Cut goat's milk cheese into 6 pieces. Spread 1 piece of cheese in centre of each pastry round. Heat oil in a frying pan and fry leeks until lightly browned. Place leeks on top of cheese. Chop remaining cheese finely and scatter on top of leeks. Bake for about 15 minutes, or until puff pastry is golden. Sprinkle pine kernels on top of cheese. Serve with a salad, or with your favourite soup.
