Layered salad

    250ml green peas, fresh or frozen

    1 small onion, peeled and halved

    2 rashers back bacon, lower fat, lower sodium, fat removed, or 1 slice smoked ham

    60ml lower fat mayonnaise

    30ml low fat or fat free milk
  • 0
    250g lettuce or baby spinach, thinly sliced
  • 0
    ½ English cucumber, quartered lengthwise and thinly sliced, optional
  • 0
    90g fat reduced feta cheese, crumbled
  • 0
    5ml sugar
  • 0
    Freshly ground black pepper


1. Pour boiling water over the peas, drain and set aside.
2. Cut the onion halves into thin slices and pour boiling water over them. Drain and set aside.
3. Dice the bacon or ham and fry until browned, using non-stick cooking spray on the pan.
4. Mix the mayonnaise and milk in a cup. Add a little extra milk, if the dressing is too thick.
5. Take a deep glass bowl of 150-200mm diameter and layer the salad, starting with lettuce, followed by peas, onion, bacon, cucumber, Feta cheese, black pepper, sugar and lastly mayonnaise mixture.
6. Repeat the layers two or three times.
7.Serve immediately
