Lamb stir-fry

Ingredients

  • 450
    g
    lamb, cut into thin strips or cubes
  • 60
    ml
    cornflour
  • 30
    ml
    olive oil
  • 2
    cloves garlic, crushed
  • 3
    leeks, thinly sliced
  • 8
    green beans, quartered
  • 4
    courgettes, julienned
  • 90
    ml
    yoghurt
  • 45
    ml
    strong mint sauce
  • mint leaves for garnish
  • Thai fragrant rice, to serve
 

Method

10 minutes
 
Coat lamb in cornflour. In a wok or heavy pan, heat the oil. Add the garlic and meat. Stir-fry for 4 to 5 minutes. Add the leeks and cook for 2 minutes. Add the beans and courgettes. Cook for further 2 minutes and remove the pan from the heat. Combine the yoghurt and mint sauce. Stir into the meat and vegetables and reheat gently. Serve on Thai fragrant rice.
