Lamb or chicken with peanut butter

    oil
  • 1
    onion, chopped
  • 1
    kg
    stewing lamb or 8 chicken pieces
  • 125
    ml
    peanutbutter
  • 75
    g
    (1 can) tomato paste
  • 4
    carrots, peeled and sliced (or 250 g mushrooms, sliced)
  • 15
    ml
    water
 

Method

 
Heat oil in a saucepan and sauté the onion lightly.
Add chicken or lamb pieces and fry until meat is brown.
Mix peanut butter and tomato paste with 100 ml water.
Add to stew and cook for about 3 minutes.
Add carrots or mushrooms and herbs.
Stir well for 1 minute.
Add water, simmer slowly for about 45 minutes, until meat is tender and cooked through.
Serve hot over pap or rice.
