Lamb and dried fruit stew

    large onion, coarsely chopped

    lamb, cut into pieces

    aubergine, cubed
  • 3
    tomatoes, skinned and sliced
  • 90

    large green lentils, washed
  • 1
    lemon, juice
  • 2
    ml
    ground ginger
  • 5
    ml
    ground cinnamon
  • 2
    ml
    allspice
  • 2
    ml
    grated nutmeg
  • 1
    ml
    turmeric
  • salt
  • freshly ground black pepper
  • 250
    g
    mixed dried fruit
 

Method

 
Sauté the onion in oil, then add the meat and brinjal and fry, stirring, until they brown. Add the remaining ingredients and water to just cover. Simmer gently with the lid on for 1 to 2 hours until the meat is very tender. Serve with basmati rice cooked with cardamom pods.
