Kingklip with cheese sauce

    kingklip fillets (or any other firm fish such as kabeljou or Cape salmon)
  • salt and pepper
  • 250
    ml
    thick salad dressing or mayonnaise
  • 250
    ml
    cream
  • 250
    ml
    breadcrumbs
  • 125
    ml
    Parmesan cheese, grated
  • 60
    ml
    fresh parsley, chopped
  • 1
    lemon, grated rind
 

Method

 
Preheat oven to 180 ºC. Dust fish fillets (about 250 g each) lightly with salt and pepper and place in the fridge for about 30 minutes. Grease a rectangular ovenproof dish. Mix salad dressing or mayonnaise and cream. Combine breadcrumbs, cheese, parsley and lemon rind. Place fish fillets in oven dish, cover with cream mixture and sprinkle with breadcrumb mixture. Bake for 30 minutes or until fish flakes. Be careful not to overcook fish.
