A traditional North Indian dish made with yoghurt and chickpea flour.

Ingredients (9)

250 ml yoghurt — fat-free plain
150 ml water
65 ml chickpea flour
7 ml garlic ginger and chilli paste
15 ml sugar
5 ml salt
5 ml amchur
65 ml fresh coriander — chopped

Method:

Add all of the above to a medium size non stick pot and whisk till the mixture is smooth, place pot on the stove on medium heat and while stirring continuously bring the mixture to a boil and remove from heat.

Heat ghee in small pan and add all of the spices, curry leaves and chillies and allow to splutter and the aroma to arise.

Remove from heat and add to the yoghurt mixture and once again put the yogurt mixture onto the stove and allow to simmer for a few minutes.

Garnish with chopped fresh coriander and serve with rice and vegetable curry.
