Ingredients (8)

6.00 onions — peeled
250.00 g bacon — streaky
6.00 fresh rosemary — sprigs
10.00 ml butter
10.00 ml garlic — cloves, finely chopped
10.00 ml fresh rosemary — chopped
50.00 ml parmesan cheese — grated
0.00 fresh rosemary — to garnish

Method:

Preheat oven to 180 &degC.
Blanch the whole onions in simmering water for 10 minutes.
Make a 2 to 3 cm hollow in the top of each onion, reserving the removed flesh.
Wrap each onion in a rasher of bacon and secure with a sprig of rosemary.
Finely chop the remaining bacon and reserved onion and fry in the butter with the garlic and chopped rosemary.
Remove from the heat, add three-quarters of the Parmesan cheese, stirring until the cheese has melted.
Spoon the bacon mixture into the hollows and sprinkle the remaining cheese on top.
Bake for 30 to 40 minutes and serve garnished with rosemary sprigs.
