Italian meringue whipped frosting

    castor sugar
  • 2
    large egg whites
  • 3
    vanilla essence

1. Heat the sugar and 60 ml water in a saucepan over a low heat, until sugar dissolves. Bring to the boil and allow to simmer without stirring, until 'hard ball' stage. (When a little of the mixture is dropped into a bowl of cold water, it will go hard.) Remove from heat. 2. Using an electric beater, beat the egg whites until stiff. 3. Gradually add the sugar syrup while the beater is on. 4. Beat until the mixture is cool and very stiff - about five minutes. Stir in vanilla essence or other flavourings. Makes enough to coat one 22 cm round or ring cake.
