Italian bean salad

    dried red beans
  • 300

    dried black beans
  • 300

    dried white beans
  • 400

    green beans, blanched
  • 6
    red sweet peppers, roasted and cut into thin strips
  • 4
    red onions, chopped
  • rocket or lettuce to serve
  • DRESSING
  • 250
    ml
    cream
  • 170
    ml
    mayonnaise
  • 2
    lemons, juice
  • 12
    garlic cloves, crushed
  • salt and milled black pepper
 

Method

 
Soak dried beans in separate containers overnight in water to cover. Drain through a colander, place in a saucepan, cover with fresh water and bring to boil. Reduce heat and simmer for 1 1/2 hours, or until cooked but not mushy. Drain through a colander and rinse under cold running water. Carefully add blanched green beans. DRESSING: Whip cream, mayonnaise, lemon juice and garlic together. Season. Mix beans with dressing. Serve on a bed of rocket or lettuce, garnished with peppers and onion.
