Island-style glazed pineapple

    butter
  • 45
    ml
    dark brown sugar (or more to taste)
  • 1
    large pineapple, peeled and cubed
  • 30
    ml
    rum
  • 3
    ml
    vanilla essence
 

Method

 
Melt butter in a large pan. Add sugar and heat, stirring occasionally, until sugar dissolves. Add pineapple and cook over moderate heat for 3 to 5 minutes. Add rum and vanilla essence and cook over high heat for a further 5 minutes. Serve hot with cream or ice cream. TOTAL KILOJOULE COUNT: 2 615 kJ (625 Cal). A portion: 655 kJ (155 Cal).
