  • 300
    g
    chocolate, broken into squares
  • 200
    g
    ginger biscuits, coarsely crushed
  • 1
    ml
    ground ginger
  • 5
    ml
    vanilla essence
 

Method

 
Melt the chocolate in a glass bowl over boiling water or in the microwave oven. Stir frequently until the chocolate has melted. Add the crushed biscuits, ginger and vanilla essence and mix well. Drop teaspoonfuls of the mixture onto wax paper and leave to set. Serve with coffee. Makes about 42 truffles.
