Individual mushroom and feta tarts

    olive oil
  • 1
    onion, chopped
  • 5
    fresh (or 2ml dried) thyme, chopped
  • 400
    readymade puff pastry
  • 200
    feta cheese
  • 4
    brown mushrooms


Heat half the oil in a frying pan and sauté the onion until tender.
Add the thyme and season to taste with salt and freshly ground black pepper.
Unroll the pastry, cut out four 10 cm discs and place them on a greased baking tray.
Divide the onion mixture between the discs, leaving a 5 mm border around the edges.
Sprinkle with half the feta cheese.
Arrange the mushrooms on the top of each disc, drizzle with the remaining oil and sprinkle with the remaining feta.
Bake in a preheated 200 ºC oven for 15 to 20 minutes until puffed and golden.
