  • 500
    ml
    water
  • 3
    onions, chopped
  • 3
    tomatoes, chopped
  • 750
    ml
    diced baby aubergine
  • salt and pepper
  • 3
    ml
    chilli powder
  • 3
    ml
    turmeric
 

Method

 
1. Add onion and tomatoes to boiling water. Simmer for ten minutes. 2. Add eggplant, seasoning and spices to tomato sauce. Cook for 20 minutes. 3. Serve with Nshima (the Zambian equivalent of pap or stiff maize meal porridge).
