Ingredients (10)

1.00 water
4.00 english breakfast tea — teabags
5.00 cm fresh ginger — strips
2.00 cardamom — pods, crushed
4.00 lemongrass — bruised and sliced
150.00 ml castor sugar
50.00 ml lemon juice
500.00 ml apple juice — cold
1.00 lemon — thinly sliced
1.00 water

Method:

Bring the water, teabags, ginger, cardamom, lemongrass and caster sugar to the boil in a large saucepan.

Reduce the heat and simmer for 3 minutes, stirring occasionally.

Remove the teabags and refrigerate the tea until ice cold.

Strain through a sieve and stir in the fruit juices and lemon slices.

Add the mineral water just before serving and pour into glasses filled with ice cubes.
