Iceberg wedges with avo and melon

Ingredients

    iceberg lettuce, cut into four wedges
  • 1
    sweet melon, peeled, seeded and sliced very thinly
  • 4
    celery stalks, cut into ribbons
  • 1
    avocado pear, peeled and cut into wedges
  • 8
    green olives, sliced
  • YOGHURT DRESSING
  • 4
    spring onions, finely chopped
  • 125
    ml
    chopped chives
  • 1
    ripe mango, peeled and chopped
  • 250
    ml
    low fat natural yoghurt
  • 30
    ml
    chopped mint leaves
  • salt and freshly ground black pepper
 

Method

 
Top the lettuce with the slices of melon, celery curls (see tips), avo and olives.
Blend together all the dressing ingredients and pour over the salad.

Tips
Celery curls jazz up a salad or open sandwich. Peel down the length of the stalk using a potato peeler. Leave in iced water for 15 minutes or until they curl.
Cutting the lettuce into wedges is a fancy way to serve it, but if you prefer, you can simply toss all the salad ingredients together.
