Ingredients (8)

90.00 g butter
60.00 g golden syrup
150.00 g brown sugar
50.00 ml water
30.00 g flour
200.00 ml milk
lemon juice — fresh
ice cream — vanilla or fruit-flavoured

Method:

1. Dissolve the butter, golden syrup, sugar and water together in a small saucepan over a moderate heat. Increase the heat and boil briskly for 3 minutes.
2. Remove the pan from the heat and sift in the flour. Gradually stir in the milk.
3. Return the pan to the stove and stir until thick. Cool slightly and stir in a little lemon juice to take the edge off the sweetness.
4. While still hot, pour sauce over scoops of ice cream and serve. This sauce keeps very well in the fridge and can be reheated just before serving.
