Ice cream with hot butterscotch sauce

    g
    butter
  • 60
    g
    golden syrup
  • 150
    g
    brown sugar
  • 50
    ml
    water
  • 30
    g
    flour
  • 200
    ml
    milk
  • squeeze of fresh lemon juice
  • vanilla or fruit-flavoured ice cream
 

Method

 
1. Dissolve the butter, golden syrup, sugar and water together in a small saucepan over a moderate heat. Increase the heat and boil briskly for 3 minutes. 2. Remove the pan from the heat and sift in the flour. Gradually stir in the milk. 3. Return the pan to the stove and stir until thick. Cool slightly and stir in a little lemon juice to take the edge off the sweetness. 4. While still hot, pour sauce over scoops of ice cream and serve. This sauce keeps very well in the fridge and can be reheated just before serving.
