Hot cajun chicken salad

    flour
  • 1
    clove garlic, crushed
  • 2

    cayenne pepper
  • 2
    ml
    paprika
  • 20
    ml
    chilli powder
  • 5
    ml
    freshly ground black pepper
  • 4
    chicken breast fillets
  • salad, to serve
  • French bread, to serve
 

Method

Preheat oven to 200 ºC. Place the flour, garlic, cayenne, paprika, chilli powder and freshly ground black pepper in a plastic bag. Drop the chicken fillets into the bag and shake until the meat is evenly coated. Remove the chicken pieces and place on a baking tray that has been coated with cooking spray. Roast in the oven for 15-20 minutes. Slice each piece into five thick slices and serve on a bed of salad with crusty French bread. Serves 4.
