    ml
    honey
  • 90
    ml
    butter
  • 1
    cinnamon stick
  • 15
    ml
    lemon juice
  • 1
    kg
    unpeeled flat white (boer) pumpkin, seeded and sliced
  • salt to taste
 

Method

 
Boil honey, butter, cinnamon stick and lemon juice in a shallow pan to form a thick syrup. Place sliced pumpkin in sauce and season lightly. Cover with a lid and simmer slowly for 10 minutes. Turn slices and simmer for another 10 minutes. Remove lid and check contents pumpkin should be soft and a brown toffee-like syrup should have formed. If not, leave to cook for a few more minutes. Remove cinnamon stick. Serve hot with every last drop of sauce from pan.
