Ingredients (10)

4.00 gammon — steaks
45.00 ml wholegrain mustard
20.00 ml mustard — powder
30.00 ml honey
sunflower oil — or butter, for frying
15.00 ml mustard — seeds
1.00 lemon — large, juice only
60.00 ml stock — chicken
30.00 ml wine — white
salt and freshly ground black pepper — to taste

Method:

Wipe gammon steaks with a damp cloth and set aside.
Mix mustards ad honey together and spread over steaks. Heat butter and oil in a pan and add mustard seeds. When seeds being to pop, add steaks. Cook steaks, turning occasionally, until done, about 5 minutes. Remove from pan and keep warm.
Increase heat to maximum and add remaining ingredients to pan juices. Allow to bubble and reduce slightly. Return steaks to pan and heat through.
Serve with steamed green beans, sautéed or boiled baby potatoes and pan juices.
