Honey and thyme roasted rainbow carrots

  • 300
    baby rainbow carrots
  • 2
    olive oil
  • 2
  • freshly ground salt and pepper
  • a few sprigs of thyme


Preheat the oven to 200 °C.

Toss the carrots with remaining ingredients and arrange onto a greased baking tray.
Roast for +- 20 minutes or until caramelised.
Serve as a side dish.
