Honey and ginger loaf

    honey
  • 145
    g
    treacle sugar
  • 5
    ml
    ground cinnamon
  • 10
    ml
    ground ginger
  • 100
    ml
    boiling water
  • 15
    ml
    brandy or orange juice
  • 255
    g
    cake flour
  • 5
    ml
    bicarbonate of soda
  • 1
    large egg, lightly beaten
 

Method

Preheat oven to 150 ºC. Place 110 g of honey, the sugar and the spices in a bowl and pour in the boiling water and brandy or orange juice. Stir well. Add the flour, bicarbonate of soda and egg and stir well. Pour into a greased and lined loaf tin and bake in the oven for 1 hour, or until a skewer inserted in the centre comes out clean. Cool for 15 minutes before removing from the tin. Glaze with the remaining honey. Makes 1 loaf (22,5 x 11,5 cm).
