Honey and banana loaf

    bicarbonate of soda

    castor sugar

    egg, lightly whisked

    bananas, mashed

    buttermilk
  • 5
    ml
    vanilla essence

    seedless raisins
  • few slices banana, dipped in lemon
  • 15
    ml
    honey, slightly heated
 

Method

Preheat the oven to 180 ºC and spray a medium-sized loaf tin with non-stick spray. Sift- the cake flour, baking powder, bicarbonate of soda, castor sugar and salt together. Mix together the egg, mashed bananas, buttermilk, vanilla essence and raisins. Add to the flour mixture and stir until smooth. Turn the batter into the loaf tin, arrange the banana slices on top and drizzle with the honey. Bake for about 45 minutes until done. Remove from the oven and leave the loaf in the tin for 10 minutes before turning out. Makes 1 medium-sized loaf.
