Herbed salmon trout cutlets

    salmon trout cutlets
  • couscous
  • coriander sprigs to garnish
  • MARINADE
  • 2
    ml
    chilli paste
  • 65
    ml
    olive oil
  • 1
    lemon, juice
  • 2
    ml
    sugar
  • 15
    ml
    chopped fresh parsley
  • salt and milled pepper
  • 15
    ml
    chopped fresh coriander
 

Method

 
Preheat grill. MARINADE: Mix all ingredients together well. Brush fish cutlets on both sides with marinade and grill on one side for about 7 minutes, turn and grill on other side for 3 minutes. Fish should be easy to flake but not too dry. Once cooked, brush fillets again with a little of the marinade and serve on a bed of couscous. Garnish salmon trout with fresh coriander leaves.
