Herbed chicken breasts

    chicken breasts, with skin
  • 1
    lemon, juice
  • salt and milled pepper to taste
  • Herb butter
  • 45
    ml
    chopped fresh coriander
  • 45
    ml
    chopped fresh parsley
  • 5
    ml
    very finely grated lemon peel
  • 5
    ml
    honey
  • 65
    ml
    butter
 

Method

 
HERB BUTTER:
Mix all ingredients well.
Using a very sharp knife neatly cut away bones from beneath chicken breasts. Make 3-4 slits, 5 mm deep, in both sides of chicken breasts.
Drizzle lemon juice over chicken and season. Place chicken, skin side down, on a baking sheet.
Spread half the herb butter over chicken and grill for 5 to 7 minutes.
Turn chicken, spread remaining butter on top and grill for a further 5 to 7 minutes, or until cooked.
Serve with boiled baby potatoes and an avocado and tomato salad.
