Hearty fish soup

  • butter and sunflower oil for frying

    large onion, chopped
  • 3
    cloves garlic, crushed

    tomatoes, chopped

    chicken stock

    peppercorns

    sugar

    white fish fillets
  • 250
    g
    marinara mix
  • 65
    ml
    brandy or dry sherry
  • salt and milled black pepper to taste
  • 250
    ml
    thick cream (optional)
 

Method

 
Heat butter and oil. Add onion and garlic and sauté until glossy, about 5 minutes. Add next 6 ingredients and bring to boil. Reduce heat, add fish and simmer for 10 minutes. Add marinara mix and brandy and cook for about 3 minutes. (Seafood only needs a few minutes to cook. Too long and it will become tough and rubbery.) Season to taste, stir in cream, if desired, and serve with crusty white or brown bread. TOTAL KILOJOULE COUNT: 7 925 kJ (1 895 Cal). A portion: 1 980 kJ (475 Cal).
