Ham and asparagus salad with endive

Ham, asparagus and endive salad

    fresh asparagus
  • 8
    thin slices ham, halved
  • 125
    g
    curly endive leaves
  • 250
    g
    yellow cherry tomatoes, halved
  • 1
    small handful
    small basil leaves
  • 60
    ml
    Parmesan cheese shavings
  • 30
    ml
    balsamic vinegar
  • 30
    ml
    olive oil
 

Method

Wrap 2 asparagus spears in 1 piece of ham and secure with a cocktail stick. Repeat for the remaining asparagus and ham. Heat a griddle pan until very hot and brown the ham parcels on both sides. (Or brown them under the grill.) Divide the endive and tomatoes among 4 plates. Sprinkle the basil over the tomatoes and the Parmesan cheese shavings over the endive. Blend the vinegar and oil and drizzle over the tomatoes and endive. Remove the cocktail sticks and divide the ham parcels among the plates, placing them alongside the salad.
