Haarders with lemon and herbs

    olive oil
  • 45
    ml
    lemon juice
  • 15
    ml
    fresh chives,
  • tarragon, basil and parsley
  • salt and freshly ground black pepper
  • pepper

    kg
    fresh haarders, scraped clean and gutted but leave the heads and tails intact
 

Method

 
Blend the olive oil, lemon juice and fresh herbs. Season the fish well with salt and pepper and brush all over with the oil mixture. Cook over medium-hot coals until done and until the flesh flakes easily with a fork.
