Guava mousse

    guava halves, drained but syrup reserved
  • 80
    g
    cherry or strawberry jelly
  • 25
    ml
    gelatine
  • 30
    ml
    cold water
  • 410
    g
    Nestlé Ideal Evaporated Milk, well chilled
  • cream for decoration
  • cherries for decoration
 

Method

 
1. Add water to guava syrup to make 550 ml. Bring to the boil and dissolve jelly in it. 2. Sponge gelatine with 30 ml cold water, dissolve over boiling water and add to the jelly. Cool completely. 3. Beat the evaporated milk until light and fluffy. Mash guavas and add to the milk. 4. Beat the guava mixture into the jelly mixture. 5. Pour into a rinsed ring mould and refrigerate until set. Loosen and unmould onto a serving platter. Decorate with cream and cherries.
