    small onion, cut into pieces
  • 2
    tomatoes, skinned and cut into pieces
  • 1
    red pepper, seeded and cut into pieces
  • green chilli, seeded and cut into pieces
  • 15
    fresh coriander leaves
  • 2
    ripe avocados, stoned, skinned and cut into pieces
  • 10
    lemon juice
  • salt and freshly ground black pepper to taste


Use a food processor to finely chop the onion, tomatoes, red pepper and chilli. Add the coriander leaves, avocados, lemon juice and seasonings. Mix to form a thick sauce. Serve with Delicious leg of lamb, Chopped mixed salad and Chopped tomato salsa (see recipes) and spoon into tortillas. Alternatively, serve with Tuna balls (see recipe) or as a snack with nachos. Makes about 750 ml guacamole.
